True Blue Coffee Roasters: Taking Coffee Back To Basics

Old Fields, WV, August 28, 2007 -- Thirty years ago, making a pot of coffee was an easy
endeavour.  One simply opened a can of coffee, put it in the percolator with some water, and
presto- after 10 minutes you had a beverage that would wake you up and give you a shot of
energy.  Unfortunately, you also ended up with a beverage that could strip paint off of
furniture.  

To combat this problem, over the years many coffee companies have resorted to using
additives and fillers to blunt the bitterness.  In the late 70’s chicory was the additive of
choice.  By the eighties, with the invention of the drip coffee maker, the coffee’s chaffe itself
was used as a filler.  During the nineties, coffee shops and coffee houses started springing up
on every corner, enticing the customers with “a shot of this and a dash of that.”  That
simple cup of coffee, suddenly became quite the complicated fare.

“Making the perfect pot of coffee isn’t nearly as hard as people may think,” Linda Keller,
Executive VP of True Blue Coffee Roasters recently explained.  “ I’ve read of people using
bottled water, an expensive machine, and outrageously high priced coffee to achieve their
coffee nirvana.  I don’t know about everyone, but I don’t keep bottled water on hand to
make coffee.  Great tasting coffee can be achieved with a few basic ingredients and an
inexpensive coffee maker.”

“The essential ingredient for a great pot of coffee, is of course the coffee,” she continued.  
“When we get green coffee beans in, we roast several small batches to find the point where
the coffee has the best flavor, while still retaining the characteristics that make each coffee
different.  Once a profile has been created for a coffee, all subsequent batches are roasted
exactly the same, guaranteeing the customer a consistently great coffee with every
purchase.”

“The next important ingredient is the water,” Ms. Keller went on.  “You don’t need bottled
water or expensive jugs of distilled water.  You can use regular tap water and still create a
wonderful coffee experience.  In cases where the tap water is hard or the water has a smell
that will come through in the coffee, you may wish to put an inexpensive filter on your
faucet. “

“Finally, you need a coffee maker.  A good old fashioned Mr. Coffee pot will produce coffee
as wonderful as the most expensive coffee maker when you follow these simple directions:

1. Start with a good quality coffee-True Blue Coffee Roasters has a line of select gourmet

customers, we suggest a more simple coffee, such as a Costa Rica Guacamayo or Colombian

2. Measure your coffee-  Don’t just pour some coffee into the coffee maker.  We suggest
you use 2 ounces of coffee for a 12- cup pot.  Two ounces is equivalent to about 3/4 cup of
coffee beans.

3. Measure your water-  If your coffee maker was designed for 12 cups, don’t try to force 14
cups into the coffee maker.  You will only overflow the machine and ruin what promised to be
great coffee.

4. Wait until the coffee maker is finished brewing-  It may be difficult for you to do this one,
but don’t pour a cup of coffee from the carafe while coffee is still brewing.  The first half of
the brew cycle produces coffee that is much stronger than the final brew.  The second half
of the brew cycle tones down the coffee to make a delightful brew in the pot.

5. The only additives you need in your coffee are cream and sugar.- You can now sit back
and enjoy a great cup of coffee that you made easily in your own home.
