Quick Iced Cappuccino
INGREDIENTS
1 medium scoop vanilla ice cream
3 tablespoons strong brewed coffee, cold
Sprinkle of unsweetened cocoa powder
DIRECTIONS
Put all the ingredients in a blender. Blend until smooth. Pour into glasses and serve. This
makes 1 serving.
Summertime Cappuccino
INGREDIENTS
2 cups strong brewed coffee
1/2 cup sweetened condensed milk
3/4 cup half-and-half cream
1/2 teaspoon vanilla extract
1 teaspoon cinnamon or shaved bittersweet chocolate (optional)
DIRECTIONS
In a mixing bowl, combine coffee and milk. Add the half-and-half and vanilla mix well. Pour
into glasses filled with ice. This makes 2 large servings.
Chocolate Coffee Delight
INGREDIENTS
4 cups brewed coffee
1/3 cup sugar
4 cups milk
4 cups chocolate ice cream, softened
2 tablespoons of chocolate syrup
1 cup of whipped cream
2 tablespoons of semi-sweet chocolate shavings (optional)
DIRECTIONS
In a large pitcher combine coffee and sugar, stir until sugar is dissolved. Add chocolate syrup
and chill for 2 hours. Add milk, scoop of whipped cream and shavings just before serving.
Makes 8 servings.
Rich Coffee Fudge Cake
INGREDIENTS
1 dark chocolate cake mix
1 (3.9 ounce) package instant chocolate pudding mix
4 eggs
3/4 cup strong brewed coffee
1/2 cup coffee flavored liqueur
1/3 cup vegetable oil
Frosting:
1 8 ounce bar of cream cheese
1 4 ounce package of instant chocolate pudding
1 small tub of whipped cream
1/2 cup coffee flavored liqueur or to taste
2 to 4 tablespoons strong brewed coffee
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour the cake pan(s) of choice.
Combine cake mix, pudding mix, eggs, coffee, 1/2 cup liqueur, and oil with an electric mixer
at low speed until moistened. Beat for two minutes at high speed. Pour batter into prepared
pan. Bake for 45 to 55 minutes, or until done. Cool for 30 minutes. Invert onto serving plate,
and prick top with a fork.
Frosting: lay out cream cheese until nice and soft, add pudding to cream cheese and mix
well. Combine liqueur, coffee, cream cheese and pudding mix together until well blended, then
fold in whipped cream, chill. Let cake cool then frost. There will be a lot of frosting, you can
make extra layers by slicing cake in more layers and frosting in between. Keep cake in
refrigerator. This cake will be great served the day after it‘s made.
No Bake Coffee Cookies
INGREDIENTS
1/2 cup butter, softened
2/3 cup white sugar
3 tablespoons unsweetened cocoa powder
1/2 cup strong brewed coffee
1/3 cup of semi-sweet chocolate chips
1/2 teaspoon vanilla extract
1 3/4 cups quick rolled oats
Confectioner’s sugar optional
DIRECTIONS
In a medium cooking pot on low heat, cream together butter or margarine, sugar, cocoa,
coffee, chocolate chips and vanilla. Add oats and mix well. Roll into 36 balls about 1 inch in
diameter. Dip balls into confectioners' sugar. Set on wax paper.
